Nutty Breakfast Bread

A wonderful way to start the day, this breakfast bread with a topping of nuts will also make a solid snack any other time of day. For brunch, this breakfast bread is ideal. It's also known as Lancaster Breakfast Bread.

2 cups flour

1/4 cup butter (1/2 stick)

1 cup sugar, scant

2 eggs

1 cup milk

½ tsp vanilla

2 tsp baking powder

½ tsp salt

Topping

4 tbls soft brown sugar (Demerara)

2 tbls flour

2 tbls soft butter

1 tbls oatmeal

½ cup chopped nuts (almonds, filberts, Brazil, pecans)

Cream butter with sugar, add eggs, and beat until the mixture is smooth.  Add the milk gradually with the vanilla.  Combine dry ingredients; add to the creamed mixture.  Beat with a wooden spoon until thoroughly blended, or use an electric mixer.  Spoon batter into a greased and lightly floured 9” x 9” x  2½” cake pan.

TOPPING:

Blend brown sugar, flour, butter, oatmeal, and chopped nuts with fingers until the mixture is crumbly.  Spread over top of batter.  Pat down gently with fingers. 

Bake in a 350° F oven for 30 minutes or until the loaf tests done with a toothpick inserted in center.  Cool before slicing.
