Fruit Cobbler |
| Cobblers will never go out of style because they are easy to make and extremely rewarding! This Cobbler recipe has a topping which is very like cake, and can use fruit such as apples, peaches, and pears. The unusual topping made from vanilla yoghurt seems fattening, but is not! |
4-5 apples, sliced (peaches or pears) mixed with demerara and cinnamon, optional 1/4 cup butter, creamed ½ cup sugar 1 egg, beaten |

1 tsp vanilla 1 cup white flour 1 ½ tsp baking powder 1/4 tsp salt ½ cup milk |
Topping -500 gm (½ qt) plain yoghurt, drained in a coffee filter -whisk yoghurt with honey to taste (several tbls) -add vanilla, cinnamon, liqueure, nutmeg |
Peel, core, and slice fruit; toss with brown sugar and cinnamon, then place in greased loaf pan. Mix dry ingredients. In a separate bowl, cream butter and sugar, then add egg and vanilla; combine well. Add dry ingredients to butter mixture alternating with the milk--end with dry (as for a cake batter). |
Pour batter over prepared fruit. Bake at 350° F for 35-40 minutes. Allow to cool slightly before serving with the yogurt topping, or with ice cream or whipped cream. |
