| Here's a handy brunch recipe that can be put together using leftovers. If you have rice, especially brown rice, cooked and maybe some boiled eggs, you're all set! |
Per serving you will need: ½ cup cooked brown rice 2-3 hard boiled eggs, quartered 1 tsp Chutney |
½ tsp Salt freshly ground pepper to taste 1 tsp curry powder 2 tbls olive oil |
-heat olive oil in a non-stick pan/stir fry pan -toss in rice, chutney, curry powder, salt, pepper |
-stir until combined -add eggs and fold in -cook until thoroughly heated -serve with beer |
