Wheat
Germ Muffins |
| A healthy whole-grain muffin recipe calls for plenty of wheat germ: get your wheat germ fresh from your health food store where it should be found refrigerated. These light, flavorful muffins are never boring! |
1 cup milk 1 egg (beaten) 3 tbls honey 3 tbls canola oil |
1 cup wheat germ 1 cup whole wheat flour ½ tsp salt 4 tsp baking powder |

Mix milk, egg, honey, and oil together. Add wheat germ and mix well. Sift together the flour, salt, and baking powder; add to the wheat germ mixture; mix. Oil muffin pan or line with paper muffin cups--or use a non-stick pan. (Use the Ice Cream Scoop Technique . . .) Fill half way with batter and bake in a pre-heated oven at 400° F for 20 minutes. |
Serve with butter or jam. |
